Chewy, rich and filled with plenty of sweetness
- 1/2 cup butter or margarine
- 3/4 cup peanut butter
- 1 cup white rice flour
- 1/4 cup tapioca flour
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 egg
- 1 small bag milk chocolate chips or Hershey Kisses
- Hazelnuts or walnuts (optional)
Preheat oven to 375°F.
Using a mixer combine the butter and peanut butter add in the flours, sugars, baking soda, baking powder and egg. Combine until thoroughly mixed. Now stir in the chocolate chips and nuts if you like.
Drop or shape the cookies and place on a cookie sheet and bake for 7-10 minutes.
